I love when you see something has been explained to the student the same way many times and they've never really grasped it, and then you reframe the explanation in a way that suits their learning style and it clicks. I think I have a keen eye for seeing when a student really gets something or is just faking so they can get the right answer an move along to the next question. I think stoking an interest in self education/exploration of a subject is more important than helping them simply pass a test (though that is important as well).
